Ingredients
  

  • 1.5 lb Atlantic salmon fillet
  • 2 lb fresh green beans
  • 1/2 cup cherry tomatoes
  • 1.5 tbsp olive oil
  • 1 tsp kosher salt
  • ground black pepper to taste
  • 1/2 tsp crushed red pepper optional

  • 1 Seasoned Cast Iron Skillet

Method
 

  1. Preheat oven to 425˚F with oven rack in top third of oven. Add oil to a cast iron skillet an rub the entire bottom or line a large baking sheet with parchment paper.
  2. Add all ingredients in a medium bowl and whisk together, set aside. Season the salmon with salt and pepper, place in large shallow container. Spoon and spread 3/4 marinate to salmon. Refrigerate for 30 minutes to 1 hour.
  3. Add salmon to a skillet/pan, add green beans, cherry tomatoes. Drizzle olive oil over greens, season with salt and black pepper.
  4. Bake at 425 F for 15-20 minutes or until internal temperature is 140 F.

Notes
