Crispy Oven Roasted Breakfast Potatoes

Start your day with my golden, crispy breakfast potatoes. Easy to make and irresistibly delicious, perfect for a hearty morning meal. You’re going to love this breakfast potatoes recipe! It's super easy to make and the potatoes come out crispy and golden brown every time.

Ingredients
  

  • 5-6 red potatoes, washed and cut into quarters
  • 1 medium onion, diced
  • 1 red bell pepper,diced
  • 1 green bell pepper,diced
  • 2 tsp fresh rosemary, chopped finely
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt & course black pepper

Method
 

  1. Preheat oven to 400°F and line baking sheet with parchment paper.
  2. Clean and cut potatoes in half or quartered,depending on size. You want the potatoes to be close to 1/2-inch cubes.
  3. Pat potatoes dry with a paper towel and place into a large bowl.
  4. Drizzle the potatoes with olive oil and toss to coat.
  5. Add thyme, garlic powder, salt and pepper. Toss to coat evenly. Arrange the potatoes so they are in a single layer, skin side down and space.
  6. Bake for 25 minutes.
  7. Add oil to peppers an onion, arrange over potatoes and bake an additional 15 minute until potatoes are golden brown.
  8. Serve and enjoy!
