CAULIFLOWER STEAK FRIED RICE

Ingredients
  

  • 1 head cauliflower
  • 2 tbsp avocado oil
  • 1/4 lb sirloin tip or flank steak, sliced thin
  • 1/2 cup broccoli florets, chopped into bite size pieces
  • 1/2 small onion, diced
  • 1 carrot, diced
  • 1/4 cup frozen green peas
  • 1 celery stalk, diced
  • 1 small red bell pepper, diced
  • 1/2 tsp black ground pepper
  • 2 eggs, beaten
Sauce
  • 2 tbsp oyster sauce
  • 1.5 tsp low sodium soy sauce 
  • 1.5 tsp sweet red chili
  • 1 tsp honey
  • 1/4 tsp rice vinegar
  • 1/4 tsp ground fresh chili paste
  • 1 tsp lemon juice

Method
 

  1. Remove all leaves and cut the cauliflower into small florets.
  2. Place the florets in a food processor and puree until they are a rice like texture. Be careful not to over process.
  3. Set a large cast iron or nonstick wok (or skillet) on high heat.  Once hot, add oil followed by steak.  Allow to sear for about 1 minute then stir continuous until the meat is no longer pink, about 4 minutes. Add a sprinkle of ground black pepper.  Mix, cook for an additional 2 minutes. Remove the steak and set aside.
  4. Add carrot, celery to wok, cook until tender. Add broccoli, bell pepper and onions.Cook for 1-2 minute or until tender. Add remaining oil to wok (skillet) if needed.
  5. Push veggies to one side of the wok. Pour the beaten eggs in, stirring only the eggs until they are cooked.
  6. Fold the eggs into the rice.
  7. Add the cauliflower rice followed by the steak and sauce. Fold together an cook for about 3 minutes until all ingredients are incorporated evenly.
  8. Fold in the frozen peas an cook for 1 minutes.
  9. Remove the wok from the heat, add the chopped green onions. Taste for seasoning an add a pinch of salt if needed.
