Method
- Remove all leaves and cut the cauliflower into small florets.
- Place the florets in a food processor and puree until they are a rice like texture. Be careful not to over process.
- Set a large cast iron or nonstick wok (or skillet) on high heat. Once hot, add oil followed by steak. Allow to sear for about 1 minute then stir continuous until the meat is no longer pink, about 4 minutes. Add a sprinkle of ground black pepper. Mix, cook for an additional 2 minutes. Remove the steak and set aside.
- Add carrot, celery to wok, cook until tender. Add broccoli, bell pepper and onions.Cook for 1-2 minute or until tender. Add remaining oil to wok (skillet) if needed.
- Push veggies to one side of the wok. Pour the beaten eggs in, stirring only the eggs until they are cooked.
- Fold the eggs into the rice.
- Add the cauliflower rice followed by the steak and sauce. Fold together an cook for about 3 minutes until all ingredients are incorporated evenly.
- Fold in the frozen peas an cook for 1 minutes.
- Remove the wok from the heat, add the chopped green onions. Taste for seasoning an add a pinch of salt if needed.
