BBQ CHICKEN SALAD

Large, fresh and totally an entree type dish, my delicious BBQ Chicken Salad is full of flavor and texture! Great for your next brunch to impress friends or for a mid week lunch or dinner.

Ingredients
  

  • 1 head of green leaf lettuce, chopped
  • 1 15 oz can black beans, rinsed and drained
  • 1 cup frozen sweet corn
  • 1 cup shredded sharp cheddar cheese
  • 1 cup cherry tomatoes
  • 1/2 cup thinly sliced red onions
  • 2 skinless chicken breast
  • 1/2 cup cilantro
  • 1 tbsp extra virgin olive oil
  • 1 tsp course sea salt
  • 1 tsp ground black pepper
  • 1 cup bbq sauce – SeeB BQ recipe

Method
 

  1. Preheat oven to 325 F
  2. Chop lettuce an clean in a large bowl of cold water for 1 minutes. Pat dry with paper towels or use a salad spinner. Set aside.
  3. Season chicken breast with sea salt & black pepper. Add oil to pan over medium high heat. Add chicken, cook for 2-3 middles on each side. Place in a oven proof pan, cook for15 minutes. Allow to sit for 5 minutes to cool.
  4. Slice chicken, combine with barbecue sauce, set aside.
  5. Arrange chopped lettuce on a large pat or platter, place chicken in the center. Add remaining ingredients on the platter/plate.
  6. Serve with ranch or your favorite dressing. Enjoy!
