- Preheat oven to 350 F. In a nonstick 8 in skillet heat 1 tablespoon of avocado oil on medium high heat. Add ground turkey, cook for 4-5 minutes until fully cooked. Add remaining 1 tablespoon of avocado oil and onions. Cook for 4 minutes occasionally until onions start to caramelize. Remove from heat and set aside.
- Whisk in 1 tablespoon of milk to the eggs, followed by the gouda cheese. Season with salt and pepper. Pour the egg mixture over the ground turkey and onions, carefully place the asparagus in the egg mixture. Place in oven and bake for 10 minutes.
- Remove the skillet from the oven with an oven safe mitt. Layer the tomato slices on top an return to oven. Bake for an additional 8-10 minutes until the eggs are fully set and firm. Make sure the temperature is at 145 F or higher.
- Servings 4. This dish is good for 3-4 days in refrigerate.
